A Low-Carb Recipe That Puts Fried Rice Back On The Menu

Are you missing fried rice due to a low carb diet? Well, I have a fried rice recipe that is not only delicious, but also low carb! Below I layout all of the ingredients you will need, plus a step by step recipe:


4 slices bacon, chopped
2 tablespoons unsalted organic butter
1 head cauliflower, grated

*Note: When I am tight for time, I will purchase the prechopped cauliflower. It’s easier and less cleanup.

2 large eggs
1 cup frozen mixed vegetables

*Note: Feel free to add as much as you want!

Salt and pepper to taste...


STEP 1: In a large saute pan over medium heat, cook bacon until almost crispy. Set aside. Pour out bacon grease but save.

STEP 2: Brown the butter until there is a nutty flavor.

STEP 3: Add the grated cauliflower and bacon grease and stir fry for 1 minute.

STEP 4: Push cauliflower to the sides of pan exposing the center of the pan. Add the 2 eggs and mix with the cauliflower. Add bacon and mixed vegetables, stir well, cover the pan and let the cauliflower mixture steam for another 3 minutes or until tender.

STEP 5: Salt and Pepper to taste.
