Avoiding Wheat? How to Keep Pizza on the Menu

Do you miss pizza since you are not eating wheat? I am asked this question repeatedly since my family and I eliminated consuming grasses (wheat, flour, oats, etc) one year ago (reference One Year Without Wheat). My answer shocks them,

We eat pizza a couple times a month.

My family loves my egg crust pizza. They love it because it tastes great! I love it because it’s low carb and lots of protein and quality fats.

The egg crust acts like a pizza dough, meaning it will “hold” the toppings on it. The pizza sauce has such a great flavor to it, when you bite into the pizza, you don’t taste eggs, you taste a great pizza.

Crust Ingredients

1 tsp unsalted grass fed butter

3 eggs

1-2 tsp Italian seasoning

1/8 tsp garlic salt (optional)

 

Pizza Sauce Ingredients

2 tablespoons chopped fresh basil

2 tablespoons extra-virgin olive oil

2 teaspoons dried oregano (or Penzeys Pizza Seasoning)

1 teaspoon minced garlic

1 (14.5-ounce) can petite-cut diced tomatoes, undrained

1 (6-ounce) can tomato paste

 

Toppings

3 slices of Applegate nitrate free pepperoni (optional)

Handful of black olives (optional)

Handful of chopped peppers (optional)

¼ cup +/- mozzarella cheese

¼ cup +/- marble jack cheese

-anything else you may enjoy

 

Directions

Preheat pan on medium with butter. Preheat oven to 450 degrees. Mix eggs, Italian seasoning, and garlic salt in a bowl. Mix pizza sauce ingredients in Nutri Bullet or blender (if sauce is too thick, simply add more olive oil to thin it to your preference. Pour egg mixture into preheated pan. Cook eggs similar to making an omelette. After one side is finished cooking, flip. (As a reference as to when the crust is finished, the egg crust will be stiff and “lifts” as one piece vs. being floppy.) When the egg mixture is fully cooked, transfer to a pizza stone or pan. Add as much sauce on as you prefer. Place toppings o pizza then cover with cheese. Bake in oven for approximately 12 minutes. When cheese is cooked to your desire, your pizza is done.

You are now eating a low carb, high protein, quality fat pizza. It’s delicious! Enjoy!
